More Seaside Inspiration...
After my day by the beach, and the promise of warmer weather, I thought a recipe that included some fish might be just the thing for today. As I think ahead to weekend visitors, and the busy-ness of the next few days, I want something that is not only quick and easy to shop for, but quick and easy to put together as well.
They were very happy days.
As with anything we source to eat, I am concerned about where my fish comes from, and with the sustainability of our fishing industry. I know my fishmonger and we talk about this alot. But this is a topic for another post.
So, notes for this dish....I try and source gluten free pasta - that's just what I prefer. A long pasta is best with this dish, so the oil coats the strands, rather than pooling within the hollows of some shaped pasta. You may like to use another type of fish. You may wish to use prawns. You may be miles from the ocean...chicken is great too. Or leave out the animal protein source all together and add cannellini beans.
As with all of my recipes, they are a springboard for you to play with, and make your own.
Add a lovely big green salad and you have a yummy lunch.
