I am sharing with you a dish that makes use of soba noodles again, delicious salmon and some green vegetables. Make it yours. Remove the fish, add extra veggies or another source of protein. Live dangerously and use black sesame seeds instead of white.
Whatever you do, just do it, and enjoy it.
2 sweet orange potato - about 800g cut into 2-3cm cubes
1 tblspn coconut oil or olive oil
1/3 C tamari (or soy sauce)
2 tblspns rice vinegar
1 tblspn honey
1 packet of soba noodles
bunch of asparagus, cut into pieces
salmon fillets baked in the oven then chopped into pieces
half a bunch of spring onions chopped into long pieces, then shredded lengthways
1 tblspns sesame seeds
Preheat the oven to 180 and bake the sweet potato until tender, but not mushy.
Whisk tamari (or soy), rice vinegar and honey together. set aside
Cook the noodles, adding the asparagus into the boiling noodles and water for the final 2 minutes
Toss sweet potato, noodles, asparagus salmon and dressing in a large serving bowl
Sprinkle the seeds and spring onion over the top
