Since last weeks recipe, I have had a few questions about rice – why did I choose the varieties I did? Can you use white rice?
Here is my take...
Promote or Demote?
Are you engaging with behaviours that promote wellness and vitality or are you indulging in ones that demote your sense of wellbeing?
With one we make conscious choices. The other allows the behaviour to rule.
When we stop making conscious choices life begins to suck.
Stress reaches terminal velocity
Alcohol starts drinking us
We manifest Scooby - doo and inhale our food
Here's an idea...
Make an awesome choice
Choose feeling great ...
Feeding yourself foods that contain life.
Choose to check-in not check out.
Choose to be the eye of the storm.
Tell ourselves a new story.
I have a shelf or two in my pantry that has been nicknamed "Platter Land" due to the number of large serving plates I have. I love to present food on a platter and let everyone dig in.
Thai Beef Salad is one of my favourites...there is a bit of something for everyone and it looks so good. This was some of my prep plate before assembling the final dish - delicious, vibrant, and colorful. YUM!
2 garlic cloves minced, or chopped finely
2 (or to your taste) small red chillis, chopped finely
2 tblspns tamari (soy sauce)
2 tblspns fresh lime juice
zest of one lime
1 tblspn fish sauce
1 tblspn palm sugar or brown sugar
If you have a mortar and pestle mush together the garlic and the chillis, then add everything else. If you don't have a mortar and pestle, just mix it all together!
1 kg beef - I usually use a fillet*
rice noodles/ cellophane noodle, or sometimes called rice vermicelli
cherry tomatoes halved
red pepper/ capsicum thinly sliced, or leave chunky
1 red onion thinly sliced
1C mint leaves
1C coriander leaves
macadamia nuts chopped
Cook the beef to your liking and slice thinly
Prepare the rice noodles as per instructions
Place the noodles on the bottom and pile the salad
on the top, finishing with the beef
Intermingle the salad as you pour the dressing over the top.
*I usually marinate my beef with ginger, garlic, limes, chillis, lemongrass, coriander, kaffir lime leaves, some tamari and olive oil before cooking.
Yoga is a great practice to change the paradigm from demotion to promotion.
Truth tends to slap you in the face on the yoga mat.
